Soils –
Rich, deep loamy soil
This orchard of tart apples is situated at the bottom of a deep, loamy valley, surrounded by woodland.
Orchard management –
The tall trees are protected from the wind by grassy strips, which promote biodiversity. No pesticides or insecticides have been used in order to preserve the environment. The orchard is certified as organic and biodynamic under the Demeter standard.
Cider production –
The apples were harvested by hand from October to November. Fermentation takes place in vats, after which the must is blended with natural yeasts in special oak casks that had previously been used to age a white St-Joseph Victoria from Domaine Julien Cécillon.
The cider was bottled at the end of April, with natural effervescence, without added sulphur, uncarbonated and unpasteurised. A second fermentation takes place in the bottle. Wild yeasts are essential for the formation of the natural head.
Extra-dry cider – Very fine natural bubbles, a bright golden colour, with almost no sweetness. On the palate, notes of citrus and almond, enhanced by a subtle salinity and oak barrel aromas.
Serving suggestions – Ideal as an aperitif or to accompany a tourtière, grilled lobster, scallops in cream sauce or a risotto…
