Soil — Rich, deep, loamy-clay soil.
Orchard management — The apple orchards are grassed, which promotes biodiversity. No pesticides or insecticides have been used, in order to protect the environment.
Cider-making — The apples were harvested by hand from October to November.
Brut Cider — Subtle, fine bubbles; a golden-yellow colour; notes of citrus and almonds, underpinned by oak and a subtle, warm salinity on the finish.
Tasting note — Ideal as an aperitif; follow with sole meunière or grilled langoustines.
