Soil — Rich, deep, loamy-clay soil.
Orchard management — The apple orchards are grassed, which promotes biodiversity. No pesticides or insecticides have been used, in order to protect the environment.
Cider-making — The apples were harvested by hand from October to November.
Brut Cider — This is a blend of cider apples, aged in a barrel that previously held Syrah. It has fine bubbles. An enveloping bitterness with notes of red fruit, redcurrant and spices.
Tasting note — Ideal with Basque-style chicken, beef bourguignon with cider, barbecued meat or cheese.
